The Evangelical Lutheran Church of Hartland held its second annual “Roast Beef Sundae”
luncheon fundraiser on Sunday, Oct. 25. The church basement was full of people who seemed eager to eat after the Sunday service. They named this hot lunch menu item after they saw a vendor at the Albert Lea county fair stack a roast beef meal and model it after an ice cream sundae.
Judy Hendrickson was watching the County Store, another feature of the day. Most of her baked goods were sold out by 11:30 a.m., but there were plenty of items for shoppers to choose from. Hendrickson highlighted a collection of handsewn items made by Sue Pederson: “She has dish cloths, scrubbies, hats, and scarves.” She also mentioned, “We also have homemade almond joys, peanut nut rolls, pumpkin bread, fresh bread, apple turnovers, apple pies, buns, Chex Mix [“trash mix” as it was labeled], caramels, turtles, cookies, jams, jellies, and salsas. We have just about everything you can think of made from the home.”
Inside the kitchen, volunteers were filling plates as fast as people could take them, Lanell Akemann said, “We’re doing this fundraiser today for two main reasons. First is to finish the dining room ceiling which is almost done. Then we’re going to fix the upstairs Altar Guild closet. Any money left over goes right back to the church.”
Lyndon Pedersen was one of those who was clearing and cleaning the tables after the guests were finished eating. Assisting him was his son Karl, who looked to be 8 years old. Karl was asked how many plates he had cleared by 11:45 a.m. He gave this question serious thought before he answered, “I have cleared 15, no 16 plates so far this morning. I like being a helper.”
Jan Kalbow, one of the Hartland Workout Girls, had just finished up the last bite on her plate when she stopped the Pioneer to say how much her friend Lavonne likes to read. She was debating eating one of the many bars and cookies left out on all the tables for dessert. It is believed she ate the chocolate peanut butter bar, but she said secretively, “A lady never tells.” She shared that she and her friends attended the sundae luncheon last year as well, and if there is another next year, “We’ll be there, too.”
